Caprese Skewer with Olive Tapenade and Balsamic Glaze

Skewer Ingredients:

Fresh mozzarella cheese, diced

Fresh basil leaves

Heirloom cherry tomatoes

Tapenade Ingredients:

1 cup pitted olives of your choice (kalamata recommended)

2 anchovy fillets, chopped (optional)

2 T capers

2 T red bell pepper, minced

5 fresh basil leaves, chopped

Zest and juice of 1/2 lemon

2 T extra virgin olive oil


Skewer Directions:

Alternate mozzarella cheese, basil, and tomatoes to fill skewer

Tapenade Directions:

Use food processor or finely chop all ingredients together. Add to bowl and stir.
